History & Name: Founded in 1911, Yinggui Steamed Bun Shop is a household-century-old snack shop in Changzhou. It’s important to note that in the Wu dialect region, “Mantou” often generally refers to “filled buns,” and Yinggui is the representative that has perfected this snack. Over a century, it has grown from a small roadside stall into an iconic brand for Changzhou dim sum.

Characteristics & Experience: The soul of the shop is its Crab Roe Soup Dumplings. Their preparation is meticulous: the wrapper, made from semi-leavened dough, is rolled extremely thin yet remarkably resilient; the filling is a perfect blend of fresh pork, secret-recipe crab oil, and solid crab roe; the top is pinched into the classic “carp’s mouth” shape. The steamed dumplings are full of succulent broth and have an enticing crab aroma.
