In the 1970s, the hotel’s founder and master chef, Zhu Shuncai, created this famous dish using the unique bighead carp and water from Tianmu Lake, making it renowned nationwide and beyond. Consequently, Tianmu Lake Hotel is regarded as the birthplace and standard-setter for this “state-banquet level” dish.
